Donovan Bar has long been known as one of the most intimate and sophisticated drinking dens in the city playing host to gatherings of the most glamorous faces of Mayfair's elite fashion and art scene. Taking inspiration from the bar's namesake and close friend of the Forte family, the iconic 1960's photographer Sir Terence Donovan. The menu consists of 16 cocktails, carefully curated by world-renowned, master mixologist Salvatore Calabrese.

The Netherlands bartenders Tess Posthumus and Timo Janse recently opened their first
cocktail bar, Flying Dutchmen Cocktails. The location was found in the Odeon, a national Dutch monument at Singel 460 in the heart of Amsterdam. Flying Dutchmen Cocktails focusses on (neo-)classic cocktails, drinks education and the creation of a true cocktail culture in the Netherlands. Flying Dutchmen teaches their guests and the bar industry something about bartending, about the stories behind the spirits, about existing recipes and about the bartenders who created these classic cocktails.

The equation does not lack beer production and bread, two products that open a wide field for testing new recipes, but also for exchanges of materials between them. Line methodically approaches fermentation and, at the same time, promises to handles as much as possible anarchically to continuously present the next step on his recipes.

Boadas was open in 1933 by Miguel Boadas (the pupil of Constante Ribalaigua at “El Floridita” in Cuba in the early 20’s) Miguel and his daughter, Maria Dolores Boadas, and now Jeronimo, worked together for 87 years to keep alive the soul of American Bars and the spirit of the authentic cocktails. Full of history and beloved by writers, painters and poets... our guests “The Boaditas” always come to visit us from around the globe and of course mostly our locals to enjoy the experience of crossing doors and make a trip back to better times at the 30’s or the 40’s...

Re- is working with 8 prominent Sydney venues and suppliers who have separated food waste and by-products from the daily running of their businesses. They collect and repurpose these into ingredients for their cocktails. All other products are supplied from surplus fruit and vegetables from the Sydney Markets via the supplier, Sydney Direct. The aim is to grow this, so all hospitality venues across Sydney share waste and by-products and in turn give to other venues. Our goal is to to cut food waste by 80%. Taking its name from an infamous street gang of the era, The Dead Rabbit is housed in a landmarked building dating back to 1828 in Lower Manhattan. The Dead Rabbit combines a first-story neighbourhood taproom serving craft beer, bottled punch and Irish whiskey, with a refined second-story cocktail parlour that offers 30 original cocktails. It has an extensive raw bar and dishes inspired by the British Isles, the locality and the era.

Callooh Callay opened in November 2008. At the time, cocktail bars in Shoreditch were few and far between. We wanted to open a venue which delivered high quality drinks and service, but without any of the pretension that came along with those things in 2008. We also wanted to do things a little differently with our design and with our menus, for which we have become pretty famous.

In the 13 years which have followed, we've been very lucky to have made drinks for, and served, hundreds of thousands of guests.

Born of the desire to be transported in a space where one can indulge in the sweet reverie of sun-drenched beached and marine reflections, CopperBay oscillates between a sailing boat square lounge and a yacht club bar. The design is elegant, with a mix of copper and light wood and features masterpieces like the copper chandelier inspired by a sailing boat wheel.
The menu features cocktail creations, aperitifs like  the "mauresque", natural wine and some selected artisanal food for an elegant picnic.
